1. Lemon and herb chicken wraps

Ingredients:

  • 2 cooked chicken breasts
  • 1 lemon
  • Fresh herbs (parsley, basil or coriander)
  • 4 large tortillas
  • 1 lawyer
  • 1 tomato
  • Salt and pepper

Preparation:

  1. Slice chicken breasts into small pieces.
  2. Squeeze the lemon and mix the juice with the finely chopped herbs, salt and pepper.
  3. Add the chicken to this mixture and marinate for 10 minutes.
  4. Mash the avocado and dice the tomato.
  5. Lightly heat tortillas (if possible) and top with marinated chicken, avocado and tomato.

  • 1 cucumber
  • 1 red bell pepper
  • 200 g feta cheese
  • 100 g black olives
  • 1 small red onion
  • 2 tablespoons olive oil

  1. Finely dice the cucumber, bell pepper and onion.
  2. Crumble the feta and pit the olives before slicing.

Ingredients:

  • 200 g quinoa
  • 1 cucumber
  • 1 yellow bell pepper
  • 100 g cherry tomatoes
  • 1 lawyer
  • 1 tablespoon cider vinegar
  • 2 tablespoons olive oil
  • Salt and pepper

Preparation:

  1. Cook the quinoa according to package instructions and leave to cool.
  2. Cut the cucumber, bell pepper, cherry tomatoes and avocado into small pieces.
  3. Mix all the vegetables with the quinoa in a large bowl.
  4. Season with cider vinegar, olive oil, salt and pepper.
  5. Mix well and serve chilled.
