1. Chicken wraps with lemon and herbs

Ingredients:

  • 2 cooked chicken breasts
  • 1 lemon
  • Fresh herbs (parsley, basil, or coriander)
  • 4 large tortillas
  • 1 avocado
  • 1 tomato
  • Salt and pepper

Preparation:

  1. Slice the chicken breasts into small pieces.
  2. Squeeze the lemon and mix the juice with the finely chopped herbs, salt and pepper.
  3. Add the chicken to this mixture and leave to marinate for 10 minutes.
  4. Crush the avocado and dice the tomato.
  5. Lightly heat the tortillas (if possible) and top with the marinated chicken, avocado and tomato.
  6. Wrap the tortillas and serve immediately.

 

2. Mediterranean salad in verrines

Ingredients:

  • 1 cucumber
  • 1 red pepper
  • 200 g feta cheese
  • 100 g black olives
  • 1 small red onion
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper

Preparation:

  1. Cut the cucumber, pepper and onion into small cubes.
  2. Crumble the feta and pit the olives before slicing into rounds.
  3. Combine all the ingredients in a large bowl.
  4. Season with the olive oil, balsamic vinegar, salt and pepper.
  5. Divide the salad into verrines or small containers for a practical and elegant presentation.

 

3. Shrimp brochette with garlic and lemon

Ingredients:

  • 300 g peeled prawns
  • 2 cloves garlic
  • 1 lemon
  • 2 tablespoons olive oil
  • Fresh parsley
  • Salt and pepper

Preparation:

  1. Slim the garlic and squeeze the lemon.
  2. Combine the olive oil, garlic, lemon juice, salt and pepper in a bowl.
  3. Marinate the prawns in this mixture for 15 minutes.
  4. Skewer the prawns.
  5. Cook the skewers on a grill or hot plate until the prawns are nicely pink (or buy pre-cooked prawns).
  6. Serve with a little fresh parsley to garnish.

 

4. Goat's cheese and honey spreads

Ingredients:

  • 1 baguette
  • 200 g fresh goat's cheese
  • 2 tablespoons honey
  • Some crushed walnuts
  • Fresh thyme (optional)

Preparation:

  1. Cut the baguette into slices and lightly toast them.
  2. Spread each slice with goat's cheese.
  3. Drizzle with a drizzle of honey and sprinkle with crushed walnuts.
  4. Add fresh thyme for an extra touch of flavour.

 

5. Quinoa and vegetable salad (Vegan)

Ingredients:

  • 200 g quinoa
  • 1 cucumber
  • 1 yellow pepper
  • 100 g cherry tomatoes
  • 1 avocado
  • 1 tablespoon cider vinegar
  • 2 tablespoons olive oil
  • Salt and pepper

Preparation:

  1. Cook the quinoa according to the packet instructions and leave to cool.
  2. Cut the cucumber, pepper, cherry tomatoes and avocado into small pieces.
  3. Combine all the vegetables with the quinoa in a large bowl.
  4. Season with the cider vinegar, olive oil, salt and pepper.
  5. Mix well and serve chilled.
